1 head of red cabbage, finely sliced
2 cloves garlic, crushed
1 pear, grated
2 eating apples, grated
a small handful of sultanas
4 tablespoon brown sugar
150mls balsamic vinegar
3 tablespoons sunflower oil
Place all the ingredients in a saucepan and simmer gently for 1 hour until the cabbage is tender.
Note: This can be cooked in advance and refrigerated until needed, it also freezes really well.
