Curried Chicken Skewers (Serves 4)

Ingredients
- 4 chicken fillets, cut into chunks
- 12 thin slices of chorizo
- 1 red pepper, cut into chunks
- 1 green pepper, cut into chunks
- 4 button mushrooms
- For the Marinade
- Juice of one lemon
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon green curry paste, I like Mae Ploy
- 4 skewers
Method
- Combine the ingredients for the marinade in a bowl, and add the chicken, cover and marinade for 1 hour.
- If the skewers are wooden soak them in cold water for 30 minutes to prevent them burning on the barbecue.
- To assemble the skewers thread a piece of chicken, then a piece of chorizo, a piece of red pepper, a piece of chicken, a piece of chorizo, a piece of green pepper and so on. Brush with a little oil to prevent sticking.
- Barbecue the skewers on a medium heat for 10-12 minutes, turning occasionally, until chicken is fully cooked
